We don't simply make sweets using Kyoto specialty ingredients.
These sweets, which let you truly "taste Kyoto",
arose from our beliefs regarding waste.
Produce cultivated by farmers must undergo strict inspection before being distributed.
And only items that pass this rigid inspection make it to the market and into the hands of the consumer.
But what happens to those things that don't make it through?

  • Items smaller than prescribed sizes
  • Items larger than prescribed sizes
  • Misshapen items
  • Bruised items

Produce such as these are discarded.
They are thrown out because of their looks, even though they still taste delicious.

Simply from of an unwillingness to compromise these items are thrown away.
We at Taniguchi felt we must do something about this wastefulness.

Couldn't we make sweets from them?
These products can be procured for cheaper than usual, and if they are turned into sweets, there is no worry about their looks.
The deliciousness stays the same.

Customers can eat truly delicious sweets at an affordable price.
If we can offer something as delightful as this, it is our duty to do so.
From this our "Taste Kyoto" sweets were born.

Horikawa Gobo Chips

Designated as one of Kyoto's traditional vegetables,
Horikawa Gobo are renowned for their rich aroma and soft,
thick character.
They are fattened to a thickness of 5-6cm through a process
that involves digging up standard burdock roots planted in
the fall, laying them on their side for replanting and re-nourishing
the roots before their final harvest.
Not only are Horikawa Gobo packed with dietary fiber and vitamin B1,
they also carry around 3 times the vitamin C found in regular burdock roots.

The light texture and salty-sweet taste
will have you craving more.

For this snack, Horikawa Gobo are washed, diced and mixed with dough,
fried in oil and flavored with a salty-sweet finish.
Thanks to the resemblance with braised kinpira gobo dishes,
many customers have described this snack as having a "light texture
and salty-sweet taste that will have you craving more" or as
"a snack-type sweet that you just can't stop eating".

Mizuo Yuzu Castella

Heading north across the Togetsukyo Bridge and up the Hozukyo Gorge,
you will find the expansive and nature-rich Mizuo region. Here,
the cold mountainous climate and pure underground waters of Mt.
Atago produce high-quality yuzu.
It takes 19 years for the yuzu found in these hillside fields of
over 100-year-old trees to bear fruit. Their rich aroma and
exceptional taste are features exclusive to naturally-growing yuzu.

Tamba Kuromame Kinako Candy

Grown in the morning mist known locally as Tamba Mist,
Tamba Kuromame come from richly ripened bean plants
that have been individually hand-picked and dried,
giving the perfectly round beans their black color.
The spherical Tamba Kuromame beans appear to have a
wax coating on their surface but when boiled gain a
lustrous beautiful finish.
They are renowned for their shine and soft sweet taste.
